QUITE a few trainers were spotted enjoying the occasional ice cream during the height of the summer months but not too many of them were probably thinking in terms of making it a second career opportunity, not even in a range of 500 different flavours.

That, however, is just what Valentia Island dairy farmer Joe Daly has been doing for the last 13 years after trying his hand at training under both codes on the family’s 120 acre farm. Horses are still very much part of his life and he still breaks and shoes them but, these days, he prefers to concentrate on his two carriage driving horses which he uses to bring tourists on tours around the island in the summer.
