IF you have been in Kildare Village shopping outlet recently you may have seen some refurbished horseboxes being used as catering units.

The horseboxes are owned by the Itsa Food company and they were refurbished by Wicklow company Little Piggy, managed by Stephen Pearson.

Stephen told us: “We restore a lot of vintage vehicles, so this job was nothing new for us but it did take a lot more work than we thought to make the horseboxes watertight and clean enough to be approved by the HSE for food preparation.”

The two horseboxes were picked up for small money and required a lot of bodywork. Stephen said: “We deliberately did not add up the hours we all put in as I’m sure we lost money on the job. It was a labour of love.”
