“HER autobiography would have to be called, ‘When The Serving Tray Comes Out’!” predicts Elizabeth Brennan. She is speaking about her mother Eileen, a constant presence at Irish Pony Club and Irish Draught events around the country and whose diary is filled with many more upcoming dates.

“As Dad says, ‘No-one could keep track of your mother on her travels! When he sees the tray left out in the kitchen at night that means Eileen is gone early the next morning,” her daughter continues. Tommy, Eileen’s husband, will be making his own tea a couple of days this week as his dynamo wife goes through her busy schedule.
